Storage matters. Like all perishable products, the storage conditions of wine have a vital impact on its long-term drinkability. If you plan to keep a bottle of wine for more than a couple of weeks, be sure to store it in a cool, stable environment with minimal diurnal (daily) temperature fluctuations. A basement or cool food storage area is ideal; if you don't have one of these, you might find a closet or floor space on the north side of your house away from any heat source. Note: Storing wine in a refrigerator is not ideal as the cold will interrupt the wine's aging process. |
